Legink\u00e1bb amiatt, hogy ilyen m\u00e9ret\u0171 termel\u00e9sben mennyi emberi munka (vagy k\u00e9zi munka, ami ugye nem k\u00e9zimunka) van. Nem volt k\u00f6nny\u0171 bet\u00f6rni\u00fck a piacra, eleinte soproni pizz\u00e9ri\u00e1kat, \u00e9ttermeket l\u00e1ttak el sajttal, alapanyaggal. A ricotta gy\u00e1rt\u00e1s\u00e1val siker\u00fclt megtal\u00e1lniuk a piaci r\u00e9st, ez s\u00ednre tette a c\u00e9get, megalapozta m\u0171k\u00f6d\u00e9s\u00e9t. B\u00e1r voltak m\u00e9lypontok, k\u00f6zt\u00fck egy-k\u00e9t eg\u00e9szen m\u00e9ly, amikor azt kellett eld\u00f6nteni, hogy v\u00e9ge a t\u00f6rt\u00e9netnek, vagy el\u0151re menek\u00fclnek tov\u00e1bb &#8211; szerencs\u00e9re az ut\u00f3bbi alternat\u00edva gy\u0151z\u00f6tt. J\u00f6tt a joghurt, a Trudi, a sajtok egyre nagyobb v\u00e1laszt\u00e9ka, az \u00faj, sz\u00e9p nagy \u00fczem, \u00e9s k\u00f6zben a vev\u0151k is megtanult\u00e1k, a Cserpes term\u00e9kek titka az, hogy nincs titok: csak azt teszik bele, ami bele val\u00f3, m\u00e1st nem. Nincs adal\u00e9kanyag, tart\u00f3s\u00edt\u00f3szer, \u00e1llom\u00e1nyjav\u00edt\u00f3, zsel\u00e9s\u00edt\u0151, sz\u00ednez\u0151, semmi. \u00c9s Cserpes Istv\u00e1n ebb\u0151l nem enged. Munk\u00e1ja j\u00f3 p\u00e9lda arra, hogy a kitart\u00f3, szorgalmas munka, \u00e9s az elvekhez val\u00f3 ragaszkod\u00e1s akkor is meghozza a gy\u00fcm\u00f6lcs\u00e9t, ha \u00e9pp szembe megy a trendekkel. Ugyanis, amikor a tejterm\u00e9kek &#8222;olcs\u00f3s\u00edt\u00e1sa&#8221; lett divat mindenf\u00e9le manipul\u00e1ci\u00f3k \u00e1r\u00e1n, \u0151 azt mondta: nem. Bej\u00f6tt. Kapuv\u00e1ri \u00fczem\u00e9ben ma mintegy 180 f\u0151 dolgozik, \u00e9s majdnem m\u00e9g egyszer ugyanennyi orsz\u00e1gszerte, a kis piaci boltokban, a budapesti tejiv\u00f3kban, \u00e9s a sz\u00e1ll\u00edt\u00e1sban.<a href=\"https:\/\/maimoni.cafeblog.hu\/files\/2017\/10\/IMG_20170918_121747.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-14281\" src=\"https:\/\/maimoni.cafeblog.hu\/files\/2017\/10\/IMG_20170918_121747-600x450.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>A fenti k\u00e9pen a paszt\u0151r\u00f6z\u0151 l\u00e1that\u00f3. Ezzel a folyamattal lecs\u00f6kkentik a tejben a nem k\u00edv\u00e1natos mikroorganizmusok, bakt\u00e9riumok sz\u00e1m\u00e1t &#8211; mehet tov\u00e1bbi feldolgoz\u00e1sra.
